Ingredients: 100g dried soybeans, adequate water (for soaking), 600ml water (for blending)

1
Soak soybeans in water for 8-12 hours (overnight in the refrigerator). Drain and wash.
2
Add soybeans and 600ml water to the PC-2110 and blend on high for 30 seconds x 2 times.

2
Dilute nigari with water, add to soy milk, stir gently 3 times, and stop immediately.

Frequently Asked Questions (FAQ)

Q1. Does soy milk made with PC-2110 taste different from commercial products?
Yes, homemade soy milk has a stronger, richer soybean flavor. You can make it thinner by reducing the amount of soybeans or thicker by increasing it. If the heating time is too short, a raw odor may remain, so be sure to heat it thoroughly for at least 10 minutes. Many people find it tastier than commercial products once they get used to it.
Q2. Where can I buy nigari?
You can buy it at supermarkets (baking supplies section), natural food stores, Amazon, Rakuten, etc. Liquid nigari (magnesium chloride solution) is easy to use and recommended. One bottle (approx. 200ml) can make about 40 batches of tofu.
Q3. What should I do if my tofu doesn't set properly?
The main reasons are: ① the soy milk temperature is too low (needs to be above 75°C), ② the nigari was stirred too much (stirring more than 3 times makes it difficult to set), or ③ the soy milk is too thin (目安 is 100g soybeans to 600ml water or less). If it doesn't set, reheat it and add a small amount of nigari.
