Frequently Asked Questions (FAQ)

Q1. Does soymilk made with PC-2110 taste different from commercial products?
Yes, homemade soymilk has a stronger, richer soybean flavor. You can make it thinner by reducing the amount of soybeans, or thicker by increasing it. If the heating time is too short, a raw bean smell may remain, so be sure to heat it thoroughly for at least 10 minutes. Many people find it tastes better than commercial products once they get used to it.
Q2. Where can I buy nigari?
You can buy it at supermarkets (baking supplies section), health food stores, Amazon, Rakuten, etc. Liquid nigari (magnesium chloride solution) is easy to use and recommended. One bottle (around 200ml) can make tofu about 40 times.
Q3. What should I do if my tofu doesn't set properly?
The main reasons are: ① the soymilk temperature is too low (needs to be 75°C or higher) ② the nigari was stirred too much (more than 3 stirs makes it difficult to set) ③ the soymilk is too thin (目安 is 100g soybeans to 600ml water or less). If it doesn't set, reheat it and add a small amount of nigari.
